Hi friends! As a holistic nutritionist, something I am asked for a lot by clients is healthy snack recipes! Lots of people know how to incorporate nourishing foods into their meals, but snack time is another story.
I’m always a fan of fast recipes that can be made in made in bulk, and take well to refrigerating, freezing, or throwing in a backpack/yoga bag for the day’s adventures. These tasty little bites fit the bill – apart from soaking, they take only 5 minutes to make!
The dried mango give these the perfect amount of sweetness – I didn’t even need to add honey. If you like things a little on the sweeter side, feel free to add a little honey (or maple syrup to make it vegan!) and taste as you go. They’re also full of healthy fats and protein from the coconut and cashews which will keep you full until meal time. Turmeric gives them a bright, beautiful sunshine color – along with potent anti-inflammatory properties.

Glow Bites – makes 20 bites
Ingredients: 2/3 cup raw cashews, 1 cup dried mango pieces, ½ cup unsweetened shredded coconut, 1 tbsp. pure vanilla extract, zest of 2 limes, pinch sea salt, pinch ground turmeric, 1-2 tsp. honey (if more sweetness desired)
- Soak cashews for 4 hrs or overnight, then drain and rinse.
- Soak mango for 20-30 minutes, or until softened (not mushy).
- Combine all ingredients in a blender or food processor except honey. Pulse until a sticky dough is formed. Taste and add honey if more sweetness is desired.
- Roll into small balls, toss in coconut, and refrigerate for up to 2 weeks.
