As part of the fun recipe Friday series, I decided to give us all a treat today. And I personally tasted these myself (as your recipe guinea pig) and they are delicious!
My biggest thing is I will never preach to you to ALWAYS EAT HEALTHY. If there’s anything I’ve taken away from yoga, and from life is general, is that it’s always about balance. If you constantly eat healthy and don’t allow yourself a treat every once in a while, you will never be 100% balanced. So for this Friday’s recipe, I made us mint chocolate waffles!
Now, I didn’t overpower them with sugar or anything, and I used olive oil instead of butter, so even if you want to bring the recipe to your comfort level – you can!
1/2 cup flour (of your choice – I used all purpose but next time I’m trying coconut)
3 tsp cocoa power
1/2 tsp pure peppermint extract
1 tbsp sugar
1 tsp baking powder
1 tbsp vegetable oil (I used olive, but you can use any vegetable oil or butter)
1/2 milk (I used soy, but you can use any of your choosing)
Pinch of sea salt
- Whisk together all dry ingredients first, then add in the oil, egg and milk.
- Whisk until all blended and no chucks
- Heat up your waffle skillet
- Cook for 2-3 mins (per waffle)
- Eat and enjoy!
